It's Saturday morning, a day in which most people relax, catch up on house chores, or have fun with the kiddies. Well, not this girl. House chores are all caught up on, no kiddies, and the hubby is at work. So I got up super early this morning and headed to the grocery store. I was there at 7:30. I normally refuse to hit the grocery on Saturday, but it was early enough and I had to get supplies to make a red velvet cake so good, it makes you want to slap your mama! Did I mention that I even made homemade icing to complement the red velvet cake. Oh yes ma'am. And all from scratch.
I know it sounds like I'm tooting my own horn, but baking is a feat. To me, cooking is easy...a little extra or less of something won't make a difference, but in baking, a teaspoon more of flour could throw your plan out of wack. If something isn't beaten or creamed into perfection, it will affect the entire recipe. So there's your warning, and happy baking!
I do believe that my grandmother and my step-mother would be proud. They both are mean bakers. My grandmother doesn't bake as much as she used to, I mean she's in her mid 80's. And my step-mother can bake any and everything, but everyone knows it which means when she bakes something, everyone wants a piece!
So now I'm offically trying my hand at it. Yeah, I've made box cakes, I've made homemade pound cakes, and cobblers, but this was such a large undertaking. Fingers crossed it turned out!
The ingredients
I'm not an avid baker, but I can cook. And I found this recipe and had to try it. Taylor and I love red velvet cake (who doesn't?) His groomscake at our wedding was a Nintendo cake that was red velvet.
Sifted cake flour with salt
Buttermilk, eggs, vanilla, baking soda and vinegar
Creaming the shortening and sugar until it got super fluffy
Red food coloring with a bit of cocoa powder
Pouring the food coloring in
Cake batter, now officially ready for baking!
Homemade icing...it's not butter cream, something a little better. Yes better. Milk and flour mixed together over heat. I let it sit in an ice bath to cool down. Then I added vanilla extract. And mixed it all with some creamed butter and sugar. Voila, homemade bad ass icing. Yes, that's the technical name.
Just don't make the mistake of sticking your finger in the milk/flour mixture, mistaking it for the creamed butter and sugar. It does NOT taste good. Big mistake, but I definitely learned my lesson!
My sink and kitchen are now a wreck!
